I haven't tried carrot cake before I went vegan but since then it became a little addiction of mine. I love those moist (even though I hate this word) cakes that are still kinda doughy but still fluffy!
After trying out a ton of carrot cake in bistros I realized that there are so many ways of creating a carrot cake. A carrot cake is not just a carrot cake - it's always a personal thing because you can see which textures and flavors the baker likes the most.
I always add more fruits to my cake because I think it is healthier then... but I mean it is vegan and there is carrot in there which means that this cake is pure detox :D Sometimes your soul needs a little present too. I believe that being too strict about food can be pretty stressful so I like eating cake here and there. What do you think?

VEGAN CARROT CAKE
prep time: cook time: 1 hourtotal time: 1 hours
A delicious vegan, moist and fluffy carrot cake
ingredients:
- 250g flour (white flour)
- 150g brown sugar
- 16g vanilla sugar
- 1 tsp baking powder
- pinch of salt
- 1 tsp cinnamon
- 1 tsp winter spice mixture
- 200g grated carrot
- 2 flax eggs
- 70ml oil
- 50g apple sauce
- 1tsp vanilla extract
- 40ml vanilla milk
- handful roasted almonds
instructions:
Preheat oven to 185°C. Butter and flour one 15x30cm pan. Shake out excess. Set aside.
Prepare flax eggs in a large mixing bowl. Add oil, apple sauce, vanilla extract and vanilla milk and whisk to combine.
Add grated carrot and stir. Then add all dry ingredients. The batter should be thick but pourable. Add the almonds.
Pour into the pan. Bake for 40 minutes or until deep golden brown.
Remove from oven and let rest in the pan for 15 minutes. Then carefully run a knife along the edges and gently invert onto cooling racks to let cool completely.
Enjoy with delicious frosting!
