VEGAN LEMON POPPYSEED CAKE

A delicious, moist and fluffy lemon cake.
ingredients:
For the cake batter:
- 200g all purpose flour
- 130g sugar
- Zest of one lemon
- 1 tsp baking powder
- 1/2 tsp salt
- 80g vegan butter
- 2 tbsp poppyseeds
- 3 tbsp chia seeds (or other egg replacements)
- 1 tsp vanilla extract
- juice of 1 lemon
- 120 ml coconut milk
- 20 ml vanilla milk
For the toppings:
- 100g vegan cream cheese
- 1/2 lemon zest
instructions:
1. Preheat the oven to 180°C.
2. Grease a baking pan.
3. In a bowl mix together the dry ingredients.
4. Pour in the wet ingredients.
5. Stir until blended.
6. Scrape the batter into the pan and bake it for 45 minutes (or until golden).
7. Let the cake cool for 10 minutes.
8. Stir together the cream cheese and lemon zest.
9. Brush the cream on the cake.
10. Enjoy with some vegan ice cream.
